we have found that website customers continue to put the current date as the event date and in hands date when placing an order via our website. Is there a way to made the default dates for these be X amount of days from the current date?

Yes I have the same issue sometimes, How about the event date and/or the in hand date be populated with the Date + Production time + shipping time selected. They can still change the date if they wanted, but at least it would clue a customer to possibly change the date.

We also run into this with our website customers. It seems that they do not pay attention to production times so I think implementing a date populated by the specifics of the item and shipping would be great.
The People have spoken! Funny how I never realized how many of us are running into the same issue

We've run into the same problem. I like the suggested solutions.
It's nice that the Needed Date now defaults to 10 days in the future, which is very helpful; but what would be awesome is if that day defaulted to the date the specific item requires. Ideally that date would also take into consideration shipping times, but if that is too wieldy since we're all in different locations, here is another idea:
1. On checkout page a note is added above Needed Date to the effect " XX-XX-XXXX Your estimated completion (and/or shipping) date. If needed sooner an upcharge may apply. If so, we will contact you."
2. In the back door of the ShopKart software we have the capability of turning this note on/off on our website. In addition, we indicate whether our store considers Saturday and Sunday production days.
3. ShopKart then automatically populates the XX-XX-XXXX in the note above with the correct date based on the production days for the item(s) ordered. If different items take a different number of days, use the longest one. The customer cannot change the date in this field.
4. ShopKart also automatically populates the Needed Date with the same date as above, and the Event Date two days later. The customer can change either of these dates.
